  • Embutido used to be a staple in a Filipino fiesta or party table. Today, one can easily buy or make embutido the whole year round. I have always loved making embutido because it allows me to add different ingredients that I may have in my pantry to give it a twist. The filling for the embutido can be used to stuff chicken relleno or chicken gallantina if you know how to debone chicken. Embutido can be wrapped in aluminum foil (wipe the foil with oil because there is a tendency for the embutido to stick to the foil), in caul fat commonly known as layalaya or sinsal and also in banana leaves which I discovered by accident many years ago when I was not able to buy the sinsal. The banana leaves gave it a very nice flavor from the leaves. Embutido can be baked or steamed. I always bake mine because I like the embutido to brown. Some steam their embutido and then fry them when it has cooled down. Whatever method you use, your embutido with the right recipe will be delicious.

    Hi! Chef Rose, I also cook embotido but I will copy your ingredients in order for me to have second version. My embotido is expensive due to one ingredient that you don’t have in this recipe.     Chef can I request how to make a yummy different flavor of peanut butter and different flavor of yema spread and what preservatives do I need to put in to make it longee the shelf life

    What can i substitute with vienna sausage or spam (no pork content) ? Your recipe looks simple. Cant i soak my bread crumbs with milk?

      Yes you can soak the bread in milk. You can use chicken vienna sausage or use chicken hot dog and omit the spam (I presume you do not eat pork). I hope I was able to answer your questions.

    Hello po Chef, I watched your videos from the beginning and some videos you mention about preservative ingredients para hinde basta basta mag mold ang food, pwede po ba malaman ang measurements halimbawa for bread meat and sauce . Please....

      For meat - add 1/2 tsp. praque powder (curing salt) for every kilo of meat.
      For breads - add 1 tsp. calcium propionate for every kilo of flour
      For cakes, sauces and fillings - add 1 gram(about 1/4 tsp) potassium sorbate per kilogram batter weight (weight of the whole mixture)
      You use different kinds of preservatives for different items because it is attacked by different kinds of molds.

      How about po sa palaman tulad ng peanut butter spread and yema spread what kind of preservatives do we need to put to make the shelf life longer like 3 to 6 months?
